There is substantial literature that describes the reduction of high Listeria counts in the presence on competing organisms; however, no literature describes effective methods to detect low levels of Listeria in probiotic cultures. This suggests that food safety monitoring of probiotics may be difficult. This study seeks to establish the detectability Listeria species in probiotic cultures and estimate the sensitivity of detection.
