Are you incorporating novel or upcycled protein materials in your products?

Novel high protein materials are becoming increasingly prevalent in the market today. These new ingredients are the result of many companies targeting consumer health, food sustainability, or improved manufacturing efficiencies/waste reduction. There are multifaceted approaches and numerous claimed benefits supporting the notion that many of these novel materials are here to stay – but with the benefits also come new challenges, specifically with accurate nutrition labeling.


This handout describes a key issue surrounding traditional determination, calculation, and labeling of
two compulsory nutrients (protein & carbohydrates) in the US Nutrition Facts Panel. Ultimately, historical methods and current FDA regulations limit the accuracy of protein determination & calculated carbohydrates in these novel high protein materials.
