Client Challenge

A food manufacturer was facing inconsistent protein and amino acid test results across different lots of their chicken-based products. These discrepancies—particularly results that fell below expected thresholds—were impacting their ability to consistently support % Daily Value protein claims on labels, posing both regulatory and brand trust concerns (Table 1).

The Eurofins Solution

The experts at Eurofins Food Chemistry Testing Madison, Inc (EFCT) partnered closely with the client to investigate the variability. A comprehensive analysis across product lots revealed a key insight: the use of multiple chicken suppliers. Because factors such as feed composition, animal husbandry practices, and processing methods can influence a meat product’s PDCAAS (Protein Digestibility Corrected Amino Acid Score), supplier inconsistency was identified as a root cause.

Outcome

Armed with these findings; the client implemented a more robust supplier qualification and monitoring program. By understanding the upstream factors that affect protein quality, they were able to strengthen quality assurance across their supplier network and improve lot-to-lot consistency.

Conclusion
