Eurofins US Food Welcomes Dr. Keith Belk to Meat Testing Division
July 3, 2025 - Eurofins US Food welcomes Dr. Keith Belk as a consultant directing our meat division training initiatives. In this role, Dr. Belk will help shape and expand educational and training initiatives that support food safety, quality assurance, and auditing across our meat operations.
Dr. Belk brings a great deal of leadership and experience. He currently serves as Professor, Holder of the Monfort Endowed Chair, and Director of the Center for Meat Safety & Quality at Colorado State University and holds an adjunct appointment at the Colorado School of Public Health.
With a career that spans academia, industry, and government, Dr. Belk offers a unique blend of scientific expertise and practical insight. From his early days as a meat buyer for Safeway, Inc. to his work with the USDA as an international marketing specialist, his commitment has remained steady to improving food systems. His research has covered a broad spectrum—from meat quality and global trade to food safety systems and microbiological ecology.
Dr. Belk has authored or co-authored over 260 peer-reviewed publications, secured more than $23 million in research funding, and holds multiple patents. He is a past president of the American Meat Science Association (AMSA), which now honors his legacy through the Keith Belk Mentor Recognition Fund.
