Quality Assurance in Agave Syrups - Jahromi and Reimann, et al

There is always a risk that sugar-rich products will be extended with sugars from a cheaper source. This poster describes some of the work Eurofins has conducted on procedures to help control the quality of agave syrups. Analysis for the simple sugars and polyols by HPAEC-PAD can be useful in some cases, but the approach is quite easy to “phase.” Oligosaccharide profiling and ᶦᶟC-SNIF-NMR offer the best approaches to control this type of product.
